3)Recipe Junction


Simple Veg Kurma(Serves 2)
*****************************
Ingredients
-------------
1)Onion - 1
2)Tomato - 1
3)Green chillies - 4
4) Vegetables of your choice (Carrot , beans, cauli flower, Potato, green peas)
(Can be done with mixed frozen vegetables also)
5)Turmeric powder
Method
-------
1)Cut onion, tomato and vegetables to small pieces.
2)Pressure boil onion , tomato, green chillies, vegetables for 2 whistles with salt and turmeric powder.
3)Heat oil in a pan and add the boiled mix
4)Add coconut powder and stir for 2 mins
5)Garnish with corriander leaves
5)Tastes good with chapathis or jeera rice.

Simple Non Veg Kurma(Serves 2)

Ingredients
------------
1)Onion - 1/2
2)Tomato - 1
3)Chicken - 200 gms
4)Ginger garlic paste - 1 tbsp
5)potato - 1
6)chilli powder - 1 tbsp
Method
-------
1)Heat oil in a pan
2)Add onion and fry till translucent or brown in color
3)Add ginger garlic paste and fry for 1 min
4)Add tomato, chilli powder, turmeric powder and 1/2 cup water
5)Stir fry for 3 mins
6)Add chicken and potato
7)Pressure boil for 3-4 whistles
8)Garnish with corrainder leaves


Egg/Chicken Kurma(Serves 2)

Ingredients
-------------
1) Egg -2
2)Chicken - small piece
(Either Chicken or Egg or both can also be used depending upon ur taste)
3)Ginger Gralic paste - 1 tbsp
4)Onion - 1 small
5)Tomato - 1
6)Sugar , salt,oil
7)chilli powder - 1 tbsp
8)Cashewnut - 10
9)Turmeric poweder
Method
---------
1)Boil eggs and chicken with some salt and water and keep them separate
2)Heat oil in a pan
3)Put 1/2 spoon of sugar and wait till it becomes red
4)Add onions and fry till they turn slightly brown in color
5)Add ginger garlic paste
6)Add tomato and 1 cup of water
7)Add chilli powder , turmeric powder and salt
8)Grind the cashewnuts and add it in the mix
9)Wait till the mix becomes dry
10)Cut Eggs and/chicken into small pieces and put them in the mix
11)Garnish with corrainder leaves
12)Serve it hot..Good combination with chappathis, rice, dosa.



Urad Dhal Rice (Uluntu Satham)

Ingredients(serves 4)

1) Urad Dhal - 1 cup(karuppu ulunthu split)

2)Rice -1 cup

3)Garlic cloves - 7-9

4)salt

5)Pepper

6)Jeera

Method

1)Mix both urad dhal and rice and wash them well.

2)Add 6 cups of water

3)Add Salt and garlic.

4)Fry pepper and jeera in a kadai without oil and add it.

5)Pressure cook for 6 whistles.

6)Best to have with chicken curry/mutton curry/fish curry or even with curd.


Dhal Recipe

As i surfed through the net i understood that there are many recipes with almost everything turned inside out. So i decided i will write something useful for the first time cooks or bachelors. Here is the simplest Dhal recipe out of my experience
Ingredients(Serves 2)

Sambhar Dhal - 1/2 cup
Onion - 1
Tomato - 1
Garlic cloves - 3-5
Turmeric powder - a pinch
Red Chilli - 2 or Chilli powder - 1/2 tbsp
Oil - 1 Tbsp
Salt
Method

1) Add dhal , garlic cloves, turmeric powder and 1 cup of water and pressure boil it to 4 whistles. 2)Heat oil in a pan
3)Add onions and fry till translucent or they become slight brown in color.
4)Add chilli powder or red chillies and fry for a minute or two.
5)Add diced tomatoes and add 1/2 cup of water and let it fry till oil separates.
6)Then add the cooked dhal and stir fry for a min.
7)Add salt to taste.
8)Can garnish with corriander leaves if required.
9)Serve hot with rice or chapathis.




Spicy Veg Bread Sandwich(4 pieces)

Since i am sitting at home with literally nothing to do, i thought i would try out new dishes (My own recipes). Here is what tried this week.

Ingredients

Sandwich Bread - 4

Onion - 1

Tomato - 1

Medium size Potatoes - 2

Cauliflower florets -some

Carrots - some

Beans - some

Green Peas -some

Vegetables can be of your own choice.This can be actually done with potatoes alone)

Chilli powder - 1 tbsp

Ginger garlic paste - 1tbsp
Oil-2tbsp

Salt



Method

1) Cut all the vegetables and boil them in cooker for 2-3 whistles



2)Heat oil in a saucepan.



3)Add onions and fry them till they become slightly brown.



4)Add ginger garlic paste and fry for 1 min



5)Add diced tomatoes.



6)Add chilli powder and fry for 1 min



7) Add 1/2 cup of water and stir the mix till the oil separates.



8)Add the boiled vegetables and fry them till they are all mashed and form a thick paste.



9)Now let this mix cool down for some time



10)Apply it on one bread slice and close it with another slice - just like the way you apply jam.Do it for all the bread slices.



11)Preheat the oven to 325 degree.



12)Keep the bread slices in a oven safe dish inside the oven for 10-15 mins.



13)After you take the bread slices out cut them diagonally.



14)Serve it hot.
